All this dragon princess stuff reminds me of a theory about the dragon from the Shrek movie.
Said theory says that the story that was told in the book in the first minutes of the first film did not refer to Fiona, but to another princess who was cursed by the fairy godmother and turned into a dragon.

That's an interesting theory! It reminds me of MatPat's video where he theorizes that Donkey was actually once a human, who was turned into a donkey on Pleasure Island, thus why he can talk! (And why he remembers getting wedgies and swirlies in college in Shrek the Third, but I like to ignore that awful movie)
As far as the dragon theory goes, if the princess in the book is NOT Fiona, but actually cursed to turn into a dragon every night, why would she be locked away in a castle, guarded BY a dragon? It makes no sense; either another dragon we never see or hear is keeping her in the castle, or SHE is the one eating all of the knights trying to rescue her!

You are right, on that point.
Although maybe it was like the story of Beauty and the beast and there was a time limit on finding your true love and it never came. Also, maybe the huge amount of corpses weren't just knights looking for Fiona.
Perhaps they were looking for that first princess without knowing the nature of the curse and with it they only found death battling against the fierce dragon that protected the maiden in distress.
Regarding the donkey issue. I definitely agree that he is one of the many children sold after being transformed on the island of pleasure. Especially when he changes bodies with Puss in Boots and he couldn't control his braying, he says to Donkey
"You'll get used to it"
The tone with which he says it is like that of someone who has already been through it.

This theory just got a lot more interesting. Forget the book and just imagine that "Dragon" used to be a princess, one who was cursed to turn into a dragon whenever a man tried to court her, and was kept locked away in a castle because of it. Every time some brave knight went to rescue her from this prison, before she could escape the castle, she would turn into a dragon, and if they didn't flee at the sight of her "monstrous" self, they would fight her thinking "oh my god you ate the princess!" and end up accidentally causing their own demise! Eventually she gave up being rescued and became resigned to her fate of living in this keep; the spell then made her dragon form permanent. When Fiona was sent there, Dragon started eating the knights coming to rescue her out of bitter spite. And then everything changed when she met Donkey. She FINALLY had found her true love!
