Handle paths correctly in Windows

Start handle paths correctly for Windows users, so that we get rid of warning 205 when running the info command.

The solution was to replace all backslashes () with forward slashes (/) when reading files and directories from disk.

Behavior looks good to me! Tested with the local polylith tests as clj -M:poly test. What wasn't working before for me now is!
