As it has been said, he is a fennec. I'm more astonished that he was digging for five days and nights without rest or sleep. now that is some determination and/or the Prophecy at work. Having been a slave he might have gotten some endurance beforehand might help.
Leaving the Prophecy aside, we have a Waterfinder that is used to this work, an ex-slave that probably had to work more than should be asked of someone before and of course him being thankful for being freed, probably being in love with Zaphira and not wanting to disappoint her as motivation. He'd probably work himself to death before he disappoints her.

That would be the ironic part, wouldn't it? Shen digs for water, find oil instead.
In fact, as you bring up Aladdin, I'd actually would have preferred to see a live action version of THIS story than Will Smith as Robin William's iconic character.
But must say, Zaphira is absolutely divine in your garments. She's beautiful with and without clothing.
