according to the wiki, yes because it's suspended animation
But apparently, like everything else in the world, if done in a shoddy manner you'll be poisoned from it and die if left for a long time.
(aka don't get bootleg carbon freezing)

But if the carbonite freezing is successful without problems, can the subject be preserved indefinitely as if it were a cryogenization?

I literally said suspended animation man. It's basically stopping time for an individual.

Cryo is a form of suspended animation - a realistic attempt using modern-day science that hasn't solved the issue of killing cells before they're suspended.

while it's not mentioned in any starwars lore, we can assume carbon freezing gets around the destroying cells issue.
