My latest little bit of food porn comes from getting a batch of baby potatoes.
First off, the potatoes were leftovers from the previous night. Simple boiled baby potatoes (But they were the blue/purple variety)
For prepwork I cut each potato into quarters, then diced half of a Red Onion and Three Quarters of an Orange Bell Pepper.
In a Frying pan on low heat I fried up four or five strips of back bacon until super-crispy. I set the slices on a paper towel to cool while I poured the substantial melted bacon grease into a Wok.
I then used the grease to fry up the onion and peppers along with some crushed chillis until the onions were looking kinda see-thru.
Next I tossed in the Potatoes and kept on tossing them about keeping them frying and getting them good and mixed up with the bacon fat, onion and peppers until they were starting to brown.
It was all looking pretty good as a bright indigo mix with orange punctuation, until I did what I normally do with hash browns and tossed in two eggs to make it a bit of a skillet.
With lighter potatoes it doesn't make a big impact color-wise but with these ones it muted the color a lot. I think if I had to do this again I would scramble the eggs separately and THEN mix them in.
Still with salt and Pepper to taste it still was delicious.
