I love this kind of worldbuilding stuff!
As for the tannins? I'd say that she might be a bit more tolerant of the taste, and stomach them better, but still not like them. Shifting her sense of taste too far might move other things in/out of her range. I'd guess she'd still remove them, even if she likes them, because she might want to share at some point.
