So, here's some bread to go with your bread.
Since I've had the time to recently, I've been making my own bread for the most part. Instead of buying any of the garbage stuff from the store. I'm still learning how to do all of this properly, but this recipe is fairly easy at least and doesn't require a mixer. Which this recipe only makes one loaf. I just make 2-3 at a time so I don't have to do this as frequently. ^^;
Ingredients:
Dough:
225g water (I just use cold water from the tap and not warm, but you can use warm)
350g bread flour
12g salt
Yeast Mix:
30g water
9g activated dry yeast
15g honey (you can use sugar or something else or just no sweetener)
Mix together the water and flour into a shaggy ball, sprinkle the salt on top and set aside for 20 minutes.
In a small bowl, pour all the yeast ingredients together and let sit for 20 minutes as well.
After that time pour all the yeast ingredients into the dough mixture and combine. This is a fairly wet dough. You can add more flour if you want, think it was another 150 to make a tighter dough. But I ended up liking the outcome of the wetter dough. Once combined cover and set aside for half an hour.
Once that time is up wet a hand, tug on the dough to stretch it out without taring it and fold it over the top. Rotate the bowl 90 degrees and do this again. With the dough being wetter you should be able to do this one full rotation plus some. Once done, try to flip the dough over and let sit for another half an hour. After that time is up do this again and then let sit for an hour to rise.
Make sure you have some sort of bread pan to cook it in. Put a little bit of flour in the pan to help prevent sticking. Turn the dough out onto a floured surface. Flatten the dough out, putting a little flour on top as well to prevent some sticking to your hands. Then stretch out sides of the dough, folding onto the top and alternating sides. Once you've done this to every side of the dough, flatten it out again and tightly roll it up. Place it into the pan and press down a bit to make sure it fills the pan out properly. Sprinkle the top lightly with flour and let sit for around 40 minutes or so. Mostly until the top is about level with the pan. At that time set the oven to 465F and put in some sort of pan or something with some water in it to help create some steam. Put the bread in for 22-25 minutes, mostly depending on how browned you want it.
Once it's done take the dough out of the pan and place on a cooling rack or something until it's cooled completely. Enjoy.

Yeah, that's been the one benefit with not working at the moment. There's no real rush to make food and I have all the time in the world. So I can technically save more money here by making a meal that'll last several days. There's only been a very few times so far that I didn't feel like cooking and we have had a "cheat" night.
