Ok, so here is a favorite comfort food that I've been making for years. It's diced potatoes and hamburger fried up in a skillet with other stuff.
1lb Hamburger
2lb Potato hash (I used safeway brand)
1 Bell pepper
1 red onion
2 jalapeño
Salt
pepper
Worcestershire Sauce
1. Dice Onion, bell pepper, jalapeno into 1/4" chunks.
2. Brown hamburger with 1/2 of the diced veggies.
3. Glug some Worchestershire sauce onto the hamburger as it browns.
4. After hamburger is brown, dump the 2lbs of diced potatoes into pot and add the rest of the veggies. Cook with lid on the pot.
5. Stir every few minutes to keep the bottom from burning. Add Salt & Pepper to taste.
When the potatoes are soft it is ready to eat. And that's about my favorite comfort food. By dividing up the veggies, you get the roasted veggies in with the meat, but get the nice crisp flavors in with the potatoes.
