Chicken Salad can be blah, boring, and the same old thing. NOT ANYMORE!! With some Latin hints of flavor, this chicken salad will wake up your taste buds and have you dancing inside and out. With just a few extra ingredients - this tasty meaty salad can be eaten as is, in a sandwich, on crackers, in pita, in an avocado ... the possibilities your stomach has is endless! Excuse me, I have some of my own drool to go clean up now.
Ingredients
8oz cooked chicken breast, shredded or diced (I poached mine, see below)
3-4 Tbsp mayo of choice
1 small scallion, chopped
2 tsp lime juice
2 Tbsp chopped cilantro
Salt and pepper, to taste
1/8 teaspoon garlic powder
1/8 teaspoon cumin
1/8 teaspoon chili powder
Optional:
Jalapeno, diced
Red onion
Avocado, diced
Directions
Combine cooked chicken, mayo, scallions, lime juice, and cilantro. Use mayo gently, or to your preference.
Season with salt, pepper, garlic powder, cumin, and chili powder.
Poached chicken:
Cover chicken breast in broth in a small pot, add water if it doesn't cover the chicken.
Add salt and pepper, a piece of celery and it's leaves (you could add herbs like parsley, garlic, onion, or whatever you want) and bring to a boil. Reduce to a simmer and cook 5 minutes.
Remove from heat, cover tight and let it sit for 15-20 minutes or until cooked thoroughly.
