If you can't tell by now ... I love my crock pot. It's so simple to just throw everything into it, have a long day of doing whatever, and coming home to a great smelling house and cooked meal. I had a request from a RL friend of mine to make a paleo chili that he could eat while on his diet. The Paleo Diet, or Caveman Diet, is this: a diet based on the types of foods presumed to have been eaten by early humans, consisting chiefly of meat, fish, vegetables, and fruit, and excluding dairy or grain products and processed food. Now ... as part Italian ... this is no good. I LOVE MY PASTA! Yet, this is a really good dish that I will eat again and again. I topped this with avocado and goat cheese. Now ... I love spicy, but this packs a heat that some people might not handle. It was a little hard for me to adjust to. For those without Iron stomachs, I suggest cutting out the red pepper flakes entirely as the peppers will give heat.
Ingredients:
1 medium white onion, diced
3 cloves minced garlic
1 red bell pepper, diced
2 jalapeños, seeds removed
1 large sweet potato, 14 oz
1 lb 93% lean ground chicken
1 lb 95% lean ground beef
2 tsp smoked paprika
2 tsp chili powder
2 tsp dried oregano
2 tsp kosher salt
1 tsp ground cumin
1/2 tsp red pepper flakes (or more you daredevil you)
1 (14 oz) can petite diced tomatoes
1 cup chicken broth
chopped scallions, for garnish
Directions
Throw everything into the crock pot except for the scallions, cook on low for 6-8 hours or high 3-4 hours. Break up meat with a spoon while stirring. Serve with toppings of your choice. Sour cream, avocado, and cheese will help cut into the spicy flavor if need to tone it done some.
