Heya people.
It's ghostbear2k and today I have an old recipe of my grandmother for you. She loved to cook it and it is extremely simple and easy to cook. Sorry, there probably isn't an English translation for the German name.
I wanted to present you a vegetarian version of her dish.
If you don't want it to be vegetarian, just replace the vegetable stock with meat stock and the smoked tofu with baloney.
Ingredients:
- 1,5kg waxy potatoes
- 1 onion
- 1 garlic glove
- approx. 600 ml of vegetable stock
- 2 heaped tablespoons of flour
- 1-2 tablespoons of vinegar
- 50g of butter
- Marjoram, parsley, bay leaf, salt, pepper, nutmeg, sugar
- 1 pack of smoked tofu (aprox 250g)
Wash potatoes, then cook them in the skin until done. Peel them, cut them into thick slices and set them aside.
Cut the onion into small cubes, peel the garlic glove and crush it a little bit with the back of your kitchen knife.
Melt the butter in a large pot, then sweat the onions and the garlic until glassy. Sprinkle in the flour, and stir until the flour is completely mixed in. Keep stirring while the mixture bubbles and until it reaches a light brown / blonde color.
Pour in the stock and whisk vigorously until it's smooth. Wait for the sauce to bubble up again, then turn down the heat, add the bay leaf, 1 tablespoon of vinegar and let it simmer for a couple of minutes until the sauce thickens.
Add the freshly chopped herbs and season to your taste with salt, pepper , sugar and nutmeg. If it's not sour enough for you, add a little more vinegar. Remove the bay leaf
Put the sliced potatoes and sliced smoked tofu directly into the sauce and let it warm up again.
