And, if can offer up a suggestion or two, maybe decrease the Field of View slider to avoid that fish eyed look with the camera and maybe up the sample rate to get rid of the AO grain ^^

A very nice update! You notice with the AO grain gone and the FOV slider not set so high how much better your render turns out?
Next step would be doing your own scene builds and getting more hands on with the lighting system. There's a ton of tutorials and resources out there on those subjects for both beginners and advanced users.
One last thing I have to mention, good on you for going the extra mile to update your old renders now that you know more about the SFM software!
