Sweets for the sweet, delicious and delightful muffin snacks from the kitchens of
chrismukkah
For Laura & Pixie. Since both my hun buns are a bit down right now, the best way I can think of to cheer them up is to make some muffins- and these I found quite by accident over at #
Muffin topping:
3 tablespoons milk (I used light cream)
1 egg slightly beaten
6 slices cinnamon bread (used the cinnamon raisin kind) crusts trimmed, cut into 1/2 inch cubes
Muffins:
1 cup milk
1/2 cup unsalted butter, melted
1 egg, slightly beaten
1 teaspoon maple extract
1 teaspoon vanilla extract
2 cups flour
3/4 cup firmly packed brown sugar
2 teaspoons baking soda (called for baking powder...oops.....still rose though)
1/2 teaspoon salt
Topping:
1/4 cup maple syrup
[ 2 tablespoons sugar]
[ 1/4 teaspoon cinnamon]
~ The reason I use brackets is...you really dont need those two other ingredients, the syrup is sugary enough! BUT if you want to put those in feel free :3
To make:
1.) Heat oven to 375 degrees Fahrenheit
2.) Combine all French toast topping ingredients in a medium bowl, and set aside to soak up the milk and eggs (keep it in the fridge would be your best bet)
3.) In a separate bowl, combine 1 cup milk, 1 egg and maple syrup, then add in the flour, salt and etc. Mix then add in the melted butter- this is so the butter has a chance not only to cool a bit, it also wont unintentionally cook the eggs or curdle the milk! Stir well until its all mixed.
4.) Spoon batter into greased 12-cup muffin pan (I used 2 throwaway muffin pans...same thing :P) Then, spoon the topping evenly over the muffins and press it down slightly on top of the muffin mixtures.
Bake for 20 to 25 minutes (did it with 5 minutes longer) or until toothpick inserted in center comes out clean.
5.) Once the muffins are out of the oven, baste IMMEDIATELY with the maple syrup. And if need be, sprinkle the cinnamon sugar right over the muffins, let cool for 5 minutes, then serve :)
