Chef Grizz's Kitchen presents Sweet & Sour Meatballs
Hey everyone, this right here is another one of my family favorites. This sweet and sour dish does require a little work, but it can easily feed a family of six.
Ingredients:
1 pound of meatballs
2 cups of rice
1 bell pepper(red, orange, yellow, or green), chopped
1 can of Del Monte Deluxe Gold pineapple chunks
Sauce:
Soy sauce
Brown sugar
White vinegar
Thickening agent:
2 tsp. corn starch
1/4 cup of reserved Pineapple juice
Step one: Cook your meatballs and rice in separate pans/pots.
Step two: Brown your meatballs, using some water as you cook. Chop up your bell pepper into bite sized pieces.
Step three: Create the sauce with the brown sugar, white vinegar, and soy sauce. The mixture should equal up to 1-1 1/3 cups. Adjust ingredients to adequate taste.
Step four: Once the meatballs are nicely browned, add the pepper and pineapple chunks.
Step five: Cook the pepper and pineapple, then make the thickening agent( cornstarch and reserved pineapple juice).
Step six: Once the pepper and pineapple is cooked, add the sauce, heat it. And add the cornstarch liquid to thicken up the sauce.
Step seven: Let the meatballs and rice cool down for about five minutes before serving.
And enjoy.

This really looks delish!
Wuff's thinking on trying the frying part in his new air fryer to get them nicely browned all over.
The air fryer is part of Vrghr's new combo Instant Pot, so wuff can take the fryer basket out and make the sauce in the bottom pot, then combine with the toasted meatballs. Can even do the rice in it first and set it aside to stay warm in a covered bowl.
This is definitely a great, tasty treat!
