Well, all of these guys from here sacrificed their lives to make sauce, I'm sad to say :p
But they did come out rather tasty so here you go:
~ tomatoes from garden (8 - 10 decent sized, chopped)
~ 1 whole 'baby bulb' of garlic (about 4-5 cloves) chopped
~ 1 teaspoon of fresh thyme
~ 1 teaspoon of fresh oregano
~ 1/2 teaspoon of fresh rosemary
(all the herbs were given a rough chop)
~ 1 packet of sugar
~ 2 - 3 tablespoons olive oil
~ dash of garlic salt, regular salt and fresh cracked pepper
~ One big sauce pot
Just add in your olive oil....saute the garlic until its yellowed, then add your tomatoes and get a decent sized potato masher and give them a good squish as you stir on a medium high heat to release all of the tomato juices. You can also use a hand blender to get the consistency you desire.
Let boil and cook down, and then simmer it for 3 to 4 hours, not kidding. *Good* sauce takes time to make, and this is no exception. I have seen other versions where you add in chopped porcini mushrooms or at least a teaspoon of anchovy paste to give more depth / umami, but I don't think that's entirely necessary. Just keep stirring it from time to time and you're good.
Then put in your favorite Bell jar...soup container...etc. and save for your favorite spaghetti or something!
