No one ever considers taste. I mean if you are going to hide in a restaurant at somepoint you will have to make yourself "food" to either get close to a target or get into a room that is restricted. You might even have to pass a taster. So technically speaking smell and taste should be considered. If you look like a rock and a geologist thinks you are interesting, they may lick you.
I mean, it's nice to have some limitations. I personally consider smell and taste to be harder senses to fool by emulation. Sight is simple enough, as is sound. Touch/feel also sounds like something with a perfectly malleable form should possess the ability to replicate. Taste and smell, however, I believe are more chemical in origin, and are not as "simple" as shape and hardness. Just feels like altering your form wouldn't grant you a new smell or taste. Sure, having perfect mimicry can facilitate shenanigans, but again, limitations can be the spice of life in their own way.
Oh i never said every mimic would had to be good at everything. Imagine a mimic who was spot on in the looks department, but since most forms lack a way to smell they were like garbage dump everytime they transformed (just an example), or the mimic who can't really do food so just does the wax versions on food. Like I'm all for limiting a power set, makes people more creative. Perfect mimicry i think should be saved for when the mimic is in a total focus state, maybe life or death.
I'd say for the average "pass among people unnoticed" goo mimic, taste is something they can likely get away with not having if they're not in the habit of imitating food. For a goo character of mine, lore wise she typically uses some potent perfume to make it much harder for other people to notice that she lacks a distinct personal odor.
