Look, if I'm gonna struggle, I'm gonna TRY to at least show people how I'm struggling if I manage to make anything interesting from it. Roommate bought some mushrooms a while back so I made some soup using a lot of stuff we've had for a long time that was meant for situations like this.
Ingredients:
2 tbs butter
4 oz shitake mushrooms, sliced
4 oz king oyster mushrooms, sliced
1 yellow onion, chopped
3 tbs minced garlic
2 cups brown rice
8 cups veggie/chicken broth
4 Tbs Lime Cilantro Hoisin Sauce
1 can corn
1 can diced tomatoes
1 can green beans
1 can pinto beans
Dry cilantro
Celery Salt
Garlic Powder
Lemon Pepper
Pepper
Dry Basil
1/2 lb Shredded Chicken
Recipe:
1- Melt Butter in pan, then toss in onions, garlic, and mushrooms. Cook until onions are translucent.
2- Add rice, 8 Cups of broth, then add all canned items. Bring water to boil and add spices and hoisin sauce, stir
3- Reduce heat to simmer, simmer for 35 minutes
4- Add chicken in the last 5 minutes
5- Enjoy!
Thoughts: Serves its purpose as a struggle meal. It's not the best soup in the world but it is still pretty good soup. Kind of hard to mess up soup. This is my first time eating king oyster mushrooms and I think they're pretty good!
