This is my new absolute pride and joy.
Well over 30 years in the making, Cawlisse is the result of someone who loves spaghetti being given free reign in the kitchen and decades of experimentation. This sauce is essentially what started the love of sauces and built the foundation for Dark Bunny. And finally, after all this time, it has been released into the wild.
This is a pasta sauce. Lots of tomatoes, a mix of other vegetables, spices, and hours over the stove. All the ingredients are the freshest we could get our hands on, making this our pride and joy. There are some jalapenos and a Thai chili in there, so it does have just a touch of heat. The only thing missing is the meat (which we will not jar for safety reasons), so brown up some ground beef and/or small beef cubes and toss them into the sauce.
Some of you may be asking "Why isn't it spicier??" And I will answer that.
First: it's at just the right spiciness for a full meal, and where most people will be able to enjoy it. There's just enough heat in it to let you know it exists, but this is a sauce I feel people will use cups of, not just spoons.
Secondly: Pair it with a hot sauce! Want more garlic? Add some Halitosis Howler or Horrible Howler! Want to make the ultimate spicy Quebecois (swear word) Collection? Add some Tabernache! The possibilities are endless!
