[redmine] guide broken

Guide is broken because redmine 6.0.x and 5.1.X require GLIBC_2.28 and 5.0.x ruby 2.5 - non of them are provided on uberspace.

We label the guide “broken” for the time being and remove it completely if nobody finds a workaround in time.

Happy to have reported it. Subscribing to the usefulness of this, but fixing this is out of scope for me.
