Quick & Easy GUT-HEALTHY Pickled Beets  🫜 INGREDIENTS 1 beet (~0.70 pounds), chopped 1/2 sweet onion, sliced Thumb size of ginger, peeled and thinly sliced 1 cup apple cider vinegar + 1/2 cup water* 1-1.5 tsp salt (we do 1.5 tsp but you can adjust to taste)  *If you’re new to ACV/vinegar or want a more beginner-friendly taste, start with a 1:1 ratio (3/4 cup ACV, 3/4 cup water). I personally like it strong, but it’s totally adjustable!  Just combine all ingredients in a 28-32oz glass jar, tightly close, shake to mix, then let it sit in fridge for at least 3 hours (ideally overnight)! Enjoy!
