Spinach Dip.
Recipe:
2 bags of fresh spinach or equivalent from frozen.
1 white onion
1 brick of cream cheese
1 carrot
1/2 to a cup of sour cream.
garlic, thyme, lemon, parsley, ginger. (feel free to play around with different spices for taste)
Steam or boil the spinach, when done, remove as much liquid as possible. Quickly chop up to get rid of any big pieces
chop the onion up into small pieces and grate the carrot up.
In a pan/pot, add some olive oil and add your spices, carrot and onion.
cook on medium until LIGHTLY brown.
in a mixing bowl, add the spinach and the contents from the pot. stir in the brick of cream cheese and the sour cream.
heat the oven to 375. Place the the dip into a baking bowl/dish and bake in the oven for 10 to 20 minutes. remove from the oven and serve with crackers, nachos or bread
