Oven-Baked Eggs in Avocado served with toast
((A lot of people are on diets right now, and are skipping breakfast. Don’t skip breakfast!
Enjoy this yummy, fast, and simple breakfast with healthy fats.))
**Easy Difficulty**
**serves 2**
You will need ramekins (or a cupcake pan) to help keep the Avocados upright)
1 large Avocado
2 small Eggs
4 slices of Bread (I used Sour Dough, but you can use a healthier bread choice)
Pinch of Garlic Powder to taste
Pinch of Onion Powder to taste
Pinch of Black Pepper to taste
Pinch of Salt to taste
1.) Slice the Avocado in half and remove the pit. Lay the Avocado halves on the ramekins and sprinkle on your desired amount of Garlic Powder, Onion Powder, Black Pepper, and Salt.
2.) Crack both eggs into their own Avocado. Place both ramekins into an oven set at 425 degrees F. / 220 degrees C. and cook for 15 to 20 minutes or until the Egg whites have become firm and no longer translucent, yet the yolk remains runny. Be sure not to open the oven until the 15 minute mark.
3.) When Eggs are done, remove from oven and place on a plate with two slices of toast. Sprinkle on some Black Pepper for garnish, and take a butter knife and spread the Egg and Avocado onto your toast and enjoy!

Slimming down, getting healthier, and eating better, which is great, but I’ve noticed a lot of my friends who are on diets are skipping breakfast. That’s a shame because skipping breakfast is the fastest way to sabotage your diet because by the time lunch rolls around, we are just so hungry we either forget our diets or over eat. Even over eating healthy foods in one sitting can ruin a diet.
It’s best to have a small, healthy breakfast to curve those cravings until lunch time. Eggs and Avocado have a nice dose of Omega-3s, protein, and other great vitamins. Healthy Fats are actually good for you, and are needed to help you lose weight. What? Fat helps you burn fat? Yep! Replacing bad fats with Healthy Fats instead during your diet can only help because our bodies processes separate types of fats and organic materials differently. If your body thinks its hungry it’ll hold onto its stores of fat in what it thinks is self preservation. This is why skipping breakfast and starving yourself is a bad idea.
With this wonderfully simple and delicious recipe in your stomach, while you move and exercise throughout the day, your body won’t try to hold onto the fat stored up because it has sustenance already. If you keep to a diet where you eat only healthy fats and cut out bad fats, you’ll begin to process the healthy fat faster and begin to burn away the stored fat over the course of several months.
If you happen to not be on a diet, this recipe is still a great way to have breakfast because it has such a smooth texture. Like a thicker butter on toast, but with way more flavor.
