So... I understand breakfast is an important part of your day... However I never really have time to eat some... UNTIL NOW THAT IS HAHA!!
No really, these are perfect for a make ahead breakfast. ESPECIALLY if you're like me and wake up, do your stuff, then go on with your day. These are awesome for a quick minute breakfast, while getting a great morning fill! :D
And you can add just about whatever you want to it. Just bake it, let it sit out, and cool it!
Stores great in the fridge for 3 days or in the freezer for 3 months.
--Ingredients are as follows--
8 eggs
1/2 cup milk
s/p as needed
Other ingredients if you wish *I just used garlic powder, a bit of adobo, tomato, baked potato, cheese, diced ham, and basil*
Estimated Prep Time - 5 minutes
Estimated Cook Time - 20 minutes
Serving Size - *Depends on the size of the muffin tin*
--Frittatas--
1. Add 8 eggs and a half cup of milk to a mixing bowl, season the mixture with some salt and pepper. Other spices are okay too. Whisk till mixed well.
2. Preheat your oven to 350f.
3. Prep whatever ingredients you would want in your frittatas. I just used a mix of ingredients.
4. Be sure to spray your muffin tin or grease it up with olive oil or butter. These babies will stick if you don't.
5. Add your prepped ingredients till it's 3/4 filled in the tin. Then add your egg mixture till is slightly covers the prepped ingredients.
6. Bake these babies for 20 to 25 minutes, depending on how firm you prefer your eggs.
And that's it! Take these out, take them out each tin and let them rest for about 30 minutes to an hour. Once they're rested place them in a ziploc bag. These store well in the fridge for 3 days or 3 months in the freezer.
