I really really enjoyed this recipe! Its labeled as a side dish in this cookbook but I ate a whole one for dinner AND lunch the next day!
Its even better when you add some salt and pepper on top!
Lets get to it!
Ingredients:
2-4 Sweet Potatoes
2 tbs Olive Oil
1/2 cup chopped/diced onion
1 cup broccoli
1 cup cauliflower
1/2 cup sour cream
1/2 cup cheddar cheese, shredded
Instructions:
Get your oven at 400 degrees F. And put the sweet potatoes in whole for 50-55 minutes or until they are cooked through
In a large skillet, on medium heat, add the olive oil and onion.
Cook the onion until its no longer raw/sweating.
Add the broccoli and cauliflower.
Add 1 tbs of water and cover to cook the veggies until they are tender.
Once thats done, add your sour cream and cheese and mix well.
Sweet potatoes should be done by now!
Split them open, be mindful of heat and steam!
Stuff them with the veggie mixture you made and then top with cheddar cheese!
Salt and pepper really go a long way for this one too!
10/10 would make again!

Very nice noms there to be had indeed and very versatile too as it would be easy to change it up to fit in with personal tastes and seasonal veg regardless of where one lives in the world. Said the same on your youtube vid...by the way well done vid and I enjoyed the music too. *hugs*
