Finally
After hours of messing around, I was able to get the maw to open wide in VRC
Now I have a rough idea what I'm doing.
Hopefully I'll be able to toy with the model a little bit as well.

If you're stuck with this sort of thing, I'd be happy to talk through what I know or such.
I've done quite a few modifications to my Nargacuga by now xD
(Including the jaw opening mechanism, which is pressure sensitive to the trigger for my cuga. I can control how wide the jaw opens with it. ;p)
