Found frozen artichoke hearts at Trader Joe's for a good price.
Recipe:
1 Bag Frozen Artichoke Hearts
1 Lemon and its zest
Lemon Juice (Or an extra lemon)
1/3 cup Mayo
Olive Oil
Butter (Can be olive oil instead)
Parmesan Cheese
Garlic Salt
Garlic Powder
Dried Basil
Salt
Pepper
Instructions:
1. Heat butter or olive oil to medium heat in a large pan, then add artichoke hearts bottoms down
2. Season artichokes with garlic salt and basil, then pour lemon juice into each 'cup' of the artichoke hearts
3. Let cook for a few minutes, until artichoke bottoms are browned. Flip artichokes and let them cook in the lemon butter top down until they are browned
4. For dip, combine mayo with juice and zest of lemon, a dash of garlic powder or to taste, salt and pepper, and then add olive oil to make it a good consistency for serving inside the artichoke cups which means it shouldn't be too runny. It needs to hold form when bitten into but still be saucy.
Thoughts: Literally cannot go wrong with artichokes and this is just using a dip I usually make for artichokes when I can. But right now I can get a bag of artichoke hearts for the same price as a single artichoke that might not even taste all that good when it comes to the puny stems they have lately. And the heart is my favorite part so this is just like having my favorite part over and over again!
