Today I am grateful that my mom is in a good mood and didn't notice that I just started dishes (I was supposed to start 2 hours ago but I started reading a book and my brother was snuggling with me and I just couldn't bring myself to get up). I consider it a genuine blessing. ToT

I'm grateful for having an extra day off of work this weekend and just spending some time just to relax. Its nice to have time to myself and take a nap.

Today I'm grateful for the Internet which is really corny, I know, but I wouldn't have been able to have made these yummy eggs otherwise! My mom did teach me how to cook and sometimes she experiments but she mostly does traditional Mexican meals while I like to eat other foods (in general I like the traditional meals but when you eat them for your whole life, you can get a little tired of them. Never mole or menudo though...never mole or menudo...) so it's really been nice to be able to find those recipes w/o a proper cookbook. Plus, it helps me gain a sense of independence. Food.
