i think simply hiding things under a handful of categories (the roles, threads and so forth) would help a lot for legibility.
you may find the list of roles looks neater if you use the list bbcode. you can simply select the text you want listed and hit this button:
you can even nest lists inside of lists! like so:

if i may say, however, i think you might be over-scoping a bit. assume at the start that you will have very few members and will not need many roles. i recommend consolidating your proposed roles a little.
thead co-ordinator and central co-ordinator, for instance, would likely end up being the same player(s) in any case.
i am aware this is only a rough concept, but it might be a good idea to try cutting theoretical roles down early.
i do have a [...] few breeding pairs that produce rare colour combos!
(plus most of my current and future planned breeding pairs are g1 x g1 pairs, so there's no risk of their hatchlings being related to any other dragons on the site :3)
only issue is that a lot of my pairs are ancients, but i have seen a few instances of people buying my ancient hatchlings and then breed changing them into cheap modern breeds to breed with, so it could be a case of "if people just want to collect pretty dragons with rare combos just for the sake of having them, they could keep their hatchlings as their original breeds", and then "if people want them for a breeding project, they could use one of the cheap modern breed changes"
your instincts are correct: if a colour combination is rare enough, then even an ancient in those colours is a valuable addition to the site. i myself have bought and fully re-gened ancients in the colours i desired because they were the only dragons available with those colours.
on breeding projects, plentiful scrolls cost less than one day's fairground cap, so that is not much of a hinderance to breeding your ancient offspring with moderns.
for a project with rare enough colours, it can be taken as read that breeding in the genes likely couldn't happen
anyway, so an all-basic plentiful is hardly a problem. i have done a few of those myself.
