A lot of the goals I have are dragon oriented.
-I get an idea for a dragon (or a pair of dragons) and then I wanna gene that up. Many of these are fandragons of random stuff/media that I like.
-On my husband and my own birthdays I hatch an egg and then challenge myself to gene both before the next birthday rolls around. This sounds easy but then there's other projects throughout the year that make resources limited. It is an interesting challenge imo, I often get to december (birthdays are in jan) and rush to gene them up in a way I actually like.
-On the off chance I'm feeling really bored I have handed the scrying workshop to my husband and had him design a goal dragon for a breeding project for me to work towards. These tend to be more time consuming and something that can be done in conjunction with the gene projects. I've done it a couple of times now and found it to be pretty fun.
I know other people work on their bestiary as a goal. Some people do those coli challenges where you need to collect a certain amount of items before you can move to another spot or 'nuzlocke' like story writing coli challenges (I thiiiink they're called something like Pinkerlockes? I've only heard about them, never done one myself). I've seen people do lineage challenges like breeding certain genes up- starting from basic until you end up with a triple gem gened dragon or breeding for the rainbow. Or collecting like an xxx of every color or as many g1s featuring a certain color or only dragons of a certain aesthetic. I've seen some very basic just unlock all available slots for their lair/hibden. Some people make a goal to collect certain things like all available vistas or as many of a certain food as they can get their hands on. For some people it's to give all their dragons some amount of lore. Stuff like that. Whatever you wanna work towards, there's lots of options.
That said your goal of one of every dragon breed is likely never ending, as they are likely going to still be coming out with new breeds, so that's something you can look forward to when you're working on other stuff.
