Change native library default to epoll over io_uring

We would need to address the two issues - #3275, #3276 and #3277 - separately:

• for Extend the Lettuce guide on how native library conflicts are solved #3275 we need to document the current behavior of the driver, before making any functional changes
• for Display warning message in log when a native library conflict arises #3276 we need to log the message in the log to make sure the user has some indication of the conflict
• for Change default to epoll and not io_uring #3277 we need to change how the driver works and address the documentation again

The first and second PR is targeted for now, the last one will be merged when we are ready to start for on 7.x
#3275 and #3276 can be addressed with the same PR (this one)

Does that make sense?
