98. hot chicken
a strange one to look at, for sure, but one i still really enjoyed.
i sliced and heated up my chicken, tossed it in some turkey gravy i had, layered it on my buttered bread, and then topped the top slice with more gravy and sweet peas.
this is one that spiritually feels like an open faced sandwich. it was one of the few closed-faced sandwiches that i had no choice but to eat with the fork. the peas and extra gravy on top feel odd, but interesting.
the sandwich and specifically the pea-gravy sauce seem to stem from galvaude, which is a variation on poutine from quebec that adds chicken and peas. i don't know how good those would be on poutine, though i guess i could see the chicken being a nice addition. the peas speficially being sprinkled on top feel like a callback to them being sprinkled on galvaude poutine.
and i loved the peas on the sandwich, they added a lot. there was a sweetness that added way more to what otherwise would have been a very generic chicken sandwich. the shredded poultry + gravy + slightly unusual vegetable choice almost reminded me of a thanksgiving bobbi
