This PR introduces a new documentation page listing all Supavisor environment variables.
The list is organized by category (proxy, metadata DB, clustering, API, etc.) for easier navigation and reference.
Some variables, such as the fly.io related ones, are likely outdated or unused and should be reviewed for removal.
