Updating assets and links for ElatoAI Arduino Speech AI agents

Summary

Updating the links and assets for the ElatoAI project in the cookbook.

Motivation

Currently the images linked here https://cookbook.openai.com/examples/voice_solutions/running_realtime_api_speech_on_esp32_arduino_edge_runtime_elatoai are not showing up as they are not linked absolutely on the mdx file here https://github.com/openai/openai-cookbook/blob/main/examples/voice_solutions/running_realtime_api_speech_on_esp32_arduino_edge_runtime_elatoai.md. This PR updates the links to use absolute links rather than relative links and adds new assets to show the demo, project structure, project flowchart clearly.
