Re-work the ListItem algorithm

Similar to https://github.com/pattern-lab/patternlab-node/issues/769, encountered listItems should expand the `extendedTemplate`, not immediately `render()`

Note to self: valid syntax will now be `listItems.number` per the docs. not supporting `listitems.number` any longer
