Describe the feature

Currently, you can disable syntax highlighting for a file by changing the detected file type on the bottom right of the UI. However, this is on a per-file basis, and disables the LSP too.

It would be nice to be able to disable syntax highlighting alone, on a per-file/directory/project/language basis.

If applicable, add mockups / screenshots to help present your vision of the feature
