Pink Frosting Cupcakes

Ingredients:

1 ¼ cups all-purpose flour

1 ¼ tsp baking powder

½ tsp salt

½ cup unsalted butter, room temperature

¾ cup sugar

2 large eggs, room temperature

2 tsp vanilla extract

½ cup whole milk


Pink Frosting:

1 cup unsalted butter, room temperature

4 cups powdered sugar, sifted

2-3 tbsp whole milk

1 tsp vanilla extract

Pink food coloring


Preheat the Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.


Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.


Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy, about 3-5 minutes.


Add Eggs & Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.


Combine Wet and Dry Ingredients: Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.


Fill Cupcake Liners & Bake: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.


Make the Frosting: Beat the butter on high until smooth. Gradually add powdered sugar, 1 cup at a time, alternating with milk as needed, until the desired consistency is reached. Mix in the vanilla extract and pink food coloring until you get your desired shade of pink.


Decorate the Cupcakes: Once the cupcakes are completely cooled, frost them with the pink frosting using a piping bag or knife.
