Because lightsabers don’t change unless you bleed them, that too has been established for years. The one on the Skeleton Crew is one picked up by a person who may or may not be a Force-wielder and may or may not have access to the Force to bleed it. He certainly hasn’t tried to do that in the show so far so there’s no reason its color would have changed. We have no idea who the saber originally belonged to because it was an item in a pirate’s treasure room.

If you’re interested in stories where lightsaber blades change color based solely on the natures of the person wielding them, Star Wars Visions features a story like that but it’s not canon to the greater Star Wars universe.
