I haven't read any Dunsany before, but I'm glad I finally got round to it. Having a whole collection of these stories was maybe a bit much to read in one go (ah, train journeys), but I did enjoy the world Dunsany created, and the mythic language he used to tell it. I should read more by and about Dunsany, I think: I don't actually know anything about him.

I highly recommend The King of Elfland's Daughter or The Charwoman's Shadow (though I'm odd in preferring his novels to his short stories), or else The Book of Wonder for more of his shorter stuff.

I just started The King of Elfland's Daughter, but it goes slowly. It has its charm but it takes concentration - too much like a fairy tale, with lots of unnecessary verbal decorations. For a modern reader, it feels a bit ponderous. Some might say it's poetic. I think you'll like it, Nikki. You read lots of mythology, so it should fit right in. It's a deep book. I'm not surprised it's a classic.
