I still hate that itch has not said that they handle the situation better and been more transparent instead they have just doubled down and refused to say anything helpful it's just sad

It's certainly not ideal, especially when their clarifications as to what's unacceptable is so broad and vague now as to be completely unworkable. The argument could be made with their standards that anything featuring animals that all furry content is banned, which would obviously not go over well with a wide swath of the community.

I maintain hope that people will be continuing to pressure the payment processors to give Itch cover to fix this, but their rep's in the shitter if they don't find a way to fix things on their end... and they're lacklustre on that front so far.

I mostly wonder if people will trust itch after this because I was going to start making a visual novel but now I'm worried that it will just get deleted no matter what

I would say not to stop. Make it anyway.

Whether or not Itch becomes a viable place to host your VN, the bullshittery around this whole situation isn't going to be bettered by people not still creating their art. Don't let this stop you! Tell the story you want to tell in spite of this!

thank you for your advice I was thinking about making a page for it before this happened but might just go make that

Art is not art when it is cowed into silence; when the artist looks at the state of the world and doesn't wonder what to make of it but instead wonders if there's a point to making anything. Art in spite of trying times, indeed art because of trying times, is art in its highest form. No story is bettered by the author's silence, and no reader's mind is enraptured by the absence of story. Create, and never stop creating!
